I was making supper last night and thought I’d share one of the easiest suppers that we make here. Ok, technically, I’m not sure if I should call it making it – it’s definitely not cooking it. It’s the easiest thing I can throw together.
You need this -
Those are tostadas, Cotija cheese, Crema Natural, and a chicken. I think Pato ate the skin off of it before he left for work, he’s gross. This is the same man who talked me into trying bucha without telling me what it was. You don’t want to know. (Ok, I’ll tell you, it’s the stomach of a cow – or in my case, a pig. So gross.)
Now, if you’re lazy like me domestically inclined, you can pull out the big old rotisserie and cook a chicken in it. I really hate to use it because it’s a pain in the toosh to clean, but if chicken is on sale for a really good price, I’ll make it in there. Otherwise, Pato picks it up for me at the Mexican store.
Now, if you have a Tienda Mexicana (Mexican store) near you the other 3 items shouldn’t be hard to find at all. Cotija cheese is similar to our Parmesan cheese in texture. It’s not quite the same, but it’ll do in a pinch. And that little tub on the side is crema natural (Natural Cream). I haven’t been able to find it in an American store, it’s sweeter than sour cream and so much better. If you can find it in your local grocery store instead of driving to the east side, I’m way jealous. Then you can see the bottle of Tapatio in back. That’s our hot sauce of choice here at our house. Actually, I like the one with the woman on front and the wooden lid better, so I should say when Pato is shopping, that’s our hot sauce of choice.
If Jordan was home, there would be lettuce and tomatoes up there too, but the rest of us don’t roll like that. I’ve tried to make the girls eat them, hoping they’d be like Jordan and not me, but they gag like I do. We find other ways to get our veggies in.
All you do is layer. Take a tostada, spread some crema on it, shred a little chicken on top (next would go the lettuce and tomatoes if you like those), then the cheese, and the hot sauce. So easy, so good, my favorite!
Usually I make rice and beans to go with it, but since it’s just the girls and I who were eating, and neither of them will eat much of the rice and beans, I’m didn’t go through the effort. They had a second tostada.

I tend to go a little hog wild when we have these. I could eat them all night.
They look naked without Jordan’s lettuce and tomatoes and without the rice and beans on the side, but oh well, you get the point. It makes a really quick lunch too if you don’t feel like cooking up a bunch of stuff.
And just with the stuff in the picture, the girls and I will have leftovers for lunch today. Heck, they’d eat it w/o the chicken if we ran out of it.

I got an education today ‘cuz I didnt even know wtf a tostada was!!! ROFL!!! I cant eat anything with the slightest heat or beef so Mexican food is kind of lost on me.

Thoughtful and interesting, thank you. I was brought up in mexico but moved to england at such a young age I barely remember anything apart from the tasty food and kind people. I finally found some authentic mexican food if you want to have a look, I thought I’d share it with you!
